Grilled Spicy Jumbo Shrimp Recipe
If you are a fan of shellfish, you will love this recipe. For any fantastic grilled shrimp recipe it is best to use the raw jumbo shrimp or grey; uncooked shrimp which are now available on most fresh fish counters in supermarkets. Alternatively, you can buy them frozen. If so, thaw them overnight in the refrigerator. The shrimp are best grilled outside on a charcoal barbecue, but will still taste delicious cooked under a regular overhead grill. Delicious served with rice.
This recipe serves four people, preparation time is fifteen minutes plus marinating time. Cooking time will be between four and six minutes.
Ingredients:
454 g raw jumbo shrimp
a few fresh coriander leaves, to garnish
wedges of lime, to serve
for the marinade you will need:
142 g low fat natural yogurt
1 garlic clove, crushed
1 tsp grated fresh root ginger
1 tsp garam masala
the juice of half a lime
1 green chili, deseeded and finely chopped
salt and freshly ground black papper
Shell the shrimp, just leaving the little piece of shell on the tail. Then, cut each one n half length ways down the tail so that the shrimp fans out. Thread the shrimp on to 4 long or 8 short wooden skewers and place them in a shallow dish.
Mix all the marinade ingredients together and spoon over the shrimp kebabs. Leave to marinade in a cook place for about twenty to thirty minutes.
Take the shrimp out of the marinade and cook under a preheated hot grill, over really hot coals, or in a hot grill pan for two or three minutes each side. They will turn pink when they are cooked. Serve immediately garnished with coriander leaves, with lime wedges.
For delicious shrimp recipes it is important to always buy uncooked shrimp as it will taste a lot juicier. Be careful not to overcook it as it will turn rubbery. Enjoy!
